The LAB aims to generate and spread high-quality information on Bolivian food heritage, developing theoretical and practical research processes to discover new culinary uses for traditional Bolivian products. This research guides the creation of sustainable by-products that, adapted to real global market demand, promote the use of Bolivian ingredients.
In collaboration with Wildlife Conservation Society, GUSTU conducts ongoing research trips across different ecoregions of Bolivia to identify, understand, and promote products with culinary potential. Our goal is to establish respectful, direct relationships with producers, communities, and local authorities throughout Bolivia, whose lives can be improved through market expansion for their products, many of which are at risk of disappearing from Bolivia’s natural pantry.
